(Serves 4)
Ingredients:
• 2 tbsp olive oil
• 1 medium onion, chopped
• 3 garlic cloves, minced
• 1 leek, sliced
• 3 medium carrots, diced
• 2 parsnips, diced
• 1 sweet potato, peeled and cubed
• 1 cup shredded savoy cabbage
• 1 tsp turmeric powder
• 1 tsp ground cumin
• 1 liter vegetable stock
• Juice of half a lemon
• 2 tbsp apple cider vinegar (raw, with the mother)
• Fresh parsley, to garnish
• Salt and pepper, to taste
Method:
1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and leek, and sauté until soft and fragrant.
2. Stir in the carrots, parsnips, and sweet potato. Add the turmeric and cumin, coating the vegetables in the spices.
3. Pour in the vegetable stock and bring to a boil. Reduce the heat and simmer for 20-25 minutes, or until the vegetables are tender.
4. Add the shredded cabbage and cook for an additional 5 minutes.
5. Remove from heat and stir in the lemon juice and apple cider vinegar. Taste and adjust seasoning with salt and pepper.
6. Serve hot, garnished with fresh parsley.
