Why is food waste problem ?
Firstly, from an environmental perspective, greenhouse gas emissions from wasted food are three times higher than those generated by global aviation. In Europe, households are responsible for 53% of all food waste. Food waste also goes hand in hand with economic losses. Throwing away food whose production required energy, water, and land is a real problem for the planet and our wallets. Better utilization of natural resources and avoiding unnecessary greenhouse gas emissions is essential.
According to the UN report on the 2024 Food Waste Index, the world wastes more than one billion meals per day.

Eat your greens !
In developed countries, consumers have become accustomed to throwing away perfectly edible food. Did you know that many vegetable tops and leaves we compost are actually edible and delicious? Indeed, these garden underdogs have much to offer! In this article, you’ll discover which ones are edible and get recipe suggestions to reduce food waste and have more sustainable eating practices.
Which ones are edible and which ones are not ?
First, let’s identify which leaves are edible and which are not. Most root vegetables, like radishes, carrots, and beets, have edible leaves. However, be cautious—potato leaves are not edible since potatoes are tubers, not roots. Always research before experimenting with a new ingredient. Moreover, most fruit-bearing vegetables, such as tomatoes, eggplants, and peppers, have inedible leaves. Finally, some flower-bearing vegetables, like broccoli, also have edible leaves. Eating brocoli leaves and stems
As mentioned, broccoli leaves are edible and perfect raw in a salad. When cooked, they resemble kale and can be a great alternative for it. Additionally, broccoli stems are often discarded. However, if you peel the tough outer layer, the core is absolutely delicious.

Cooking with carrot tops
Now, let’s talk about carrot tops. Raw carrot tops can be used like an herb, making them perfect for a pesto, soup, or as a garnish in a quiche.

Beets leaves, the substitute for spinach
We also have beets in our garden, which have edible leaves. Beet greens are highly versatile and can be cooked like spinach. The most popular way to prepare them is to sauté them.

Finally, let’s discuss radish leaves. Whether raw or cooked, radish leaves deserve a spot on your plate. Younger leaves are milder and less bitter. They are most commonly used in soups or gazpacho.

Health benefits of greens
Vegetable tops are often packed with nutrients like vitamins (A, C, K), minerals (calcium, iron), and antioxidants, sometimes even more so than the main vegetable itself. Why not add some in your green juice ! Beet greens and broccoli leaves, are rich in vitamin K, which is essential for bone health and blood clotting.
