Nemesis –
Chocolate is one of those things many of us can’t say no to, an ingredient that has us wanting more and one of natures strongest aphrodisiacs. This recipe will leave you wanting more despite its richness. This mousse like cake pairs perfectly with other aphrodisiacs such as honey, figs or strawberries or serve simply with a scoop of good quality vanilla ice cream or a dollop of double cream.
Serves 10
5 large eggs
300g castor sugar
125g water
350g 70% dark chocolate
225g unsalted butter, diced
Line a 9inch round cake tin with greaseproof paper. Preheat the oven to 140*C.
In a large bowl, combine the eggs with 100g of castor sugar. Whisk on high until tripled in volume. This will take roughly 10 minutes. Set aside.
Melt the chocolate and butter in the microwave in 30 second increments, stirring each time until just melted. Meanwhile, combine the remaining 200g sugar with the water in a small saucepan. Heat until the sugar has fully dissolved.
Pour the sugar mixture into the chocolate, mix well. Gently fold the chocolate mixture into the eggs, mix until just combined. Pour into the prepared cake tin.
Bake for 1 hour or until set. A crust will form on top. Remove from the oven and allow to cool at room temperature. When the nemesis comes out of the oven, it will deflate, don’t be alarmed!
There is no need to refrigerate the nemesis. Once fully cooled, slice with a hot wet knife.
